Breakfast

This is a typical breakfast I make in my house.  The pancakes are oatmeal, flax seed and pancake mix with sprinkles added during the cooking process.   My boys love strawberries, so they accompany lots of meals here.  I normally wouldn't plate it this way.  Normally there would be a big community plate of silver dollar sized pancakes and another separate plate of strawberries that the boys just pick at.

The drink is a smoothie.  For this one I used bananas, watermelon, pineapple, oj and pomegranate juice.  I always have frozen strawberries in the freezer for smoothies, and almost always have bananas in the house.  Depending on what fruit is in season, and which fruits my kids like at any given time determines what goes into the smoothies.  When I cut up a watermelon or pineapple, there's  almost always a good amount that sits at the bottom of the tupperware and gets thrown out once it becomes water-logged and no one wants to eat them.  I take those fruits and throw them in a freezer bag to be used for the smoothies.  I used to put milk in them too, but then once I went on a dairy-free diet, I realized how much more refreshing the shakes are without the milk, and my boys like them just as well.  Not to mention, the boys get more milk than they need without having it in here.

Thank God the boys love their smoothies, because it's the main source of their fruits and veges.  I sneak carrots and spinach in their smoothies when I have them in the house too.

I never ever feel like the best mom in the world, but when it comes to figuring out how to feed my kids the stuff they love and manage to make them healthy too, I feel like I've done something right.

  1. It's obvious to anyone who even slightly knows you that you're an amazing mom.
